We source our Angus influenced cattle primarily from the Steen Family, operating ranches in Dewitt, Wilson, La Salle, and Zavala Counties.
We grow the animals at our ranches in Jackson, Wharton, and Atascosa Counties, on planted summer and winter pastures as well as native and improved perennial grasses, some of which is irrigated. Upon the cattle reaching an approximate target weight of 1100 pounds, we make the short haul to Walhalla Valley Smokehouse and Meat Market in La Grange, Texas, a USDA Certified Packing Plant.
Here they are dry aged for 21 days, where customers can have the beef butchered in the format they desire.
